2022 Estate Dolcetto
Walla Walla Valley
Dolcetto, which means "little sweet one" in Italian. Confusingly, it's not a sweet wine at all, but rather friendly with berry fruit and framed by pronounced but not overpowering tannins.

Wine Profile
Tasting Notes
This wine has a bright ruby color and a fruit-driven nose of plum, almond, and violet. Flavors of
fresh cherry and cocoa carry through in the mouth. This wine is refreshing with a finish that is
long and well-balanced. Drink slightly cool. Best to enjoy now but with proper cellaring can age up to five years from vintage.
Vineyard Notes
This is the last vintage of Dolcetto from Woodward Canyon Estate Vineyard. This block of grapes was removed in 2023. The low-lying location of this block led to frequent problems with winter freeze and spring frost.
Production Notes
2022 was a cooler than normal vintage in April and May. However, June through August, turned very warm and the Dolcetto ripened nicely. Harvest was two weeks later than normal. Yields were above normal (3.7 tons/acre). The fruit was hand sorted, destemmed, and then fermented in a 3-ton open-top. Prise de Mousse yeast was used and ferments were pumped over twice a day. Drained and pressed to 225 L barrels after five days on the skins. Yeast fermentation finished in barrels. There was no malolactic fermentation in this vintage.
Food Pairing Notes
This wine pairs beautifully with heavy salmon dishes, Moroccan stews, and pasta dishes with sun-dried tomato.
